Ingredients

  • 16 ounces cremini mushrooms or white mushrooms, sliced
  • 1 yellow onion sliced thin
  • 3 tablespoons olive oil
  • 1 teaspoon fresh thyme plus more for garnish
  • 2 teaspoons granulated garlic
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 1 cup parmesan cheese grated

Instructions

  • Add olive oil and onions to a large skillet and place over medium-high heat.
  • Cook, stirring occasionally until onions are softened, about 10 minutes.
  • Add sliced mushrooms and continue to cook until mushrooms start to brown and liquid has evaporated.
  • Season with thyme, garlic, salt and pepper, stirring to combine. Continue to cook another 5 minutes.
  • Top with grated parmesan and turn off the heat.
  • Serve when cheese has melted and garnish with additional thyme if desired.

Notes

  • Use a mix of mushrooms if preferred.
  • Swap fresh thyme for rosemary or parsley.
  • For extra richness use butter in place of olive oil.
  • Store leftovers in an airtight container in the refrigerator for 2-3 days.
  • Reheat in a skillet over medium heat, stirring until heated through.
