Ingredients

  • 14 ounces Petit Jean Meats Smoked Sausage
  • 1 ½ pounds russet potatoes
  • 2 bell peppers
  • 1 large red onion
  • 3 garlic cloves
  • ½ cup olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  • Prep the Ingredients – Peel and cut the potatoes into bite-sized pieces. Rinse the potatoes, drain well and dry with paper towels.
  • Slice the smoked sausage into rounds.
  • Chop the red onion and bell peppers into chunks about the size of the potatoes. Mince the garlic.
  • Heat olive oil in a large cast-iron skillet over medium-high heat. Add the potatoes and cook until they crisp up, stirring occasionally. Remove to a bowl.
  • In the same skillet, add the smoked sausage and cook until browned. Remove to the bowl with the potatoes.
  • Add the red onion and bell peppers to the skillet and cook for about 3 minutes. Stir in the minced garlic and continue cooking until vegetables are softened.
  • Return the potatoes and smoked sausage to the skillet. Add the smoked paprika, dried thyme, salt, and pepper. Mix well and cook for an additional 5 minutes the mixture is hot and flavors come together.

Notes

  • Storage – Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating – Warm leftovers in a skillet over medium heat to maintain the crispiness of the potatoes.
  • Variations – Add more vegetables like mushrooms, broccoli or zucchini for extra flavor, or toss in some shredded cheese for a melty, cheesy finish.
