Peach & Blueberry Cake Waffle Shortcakes

Ingredients

  • 1 15.25 oz Yellow Cake Mix
  • 3 eggs
  • cup melted butter
  • 1 cup milk

For shortcake toppings

  • 2 cups sliced peaches
  • 1 cup fresh blueberries
  • 2 cups fresh sweetened whipping cream or whipped topping

Instructions

  • In a large mixing bowl, add cake mix, eggs, butter and milk. Beat with an electric mixer until smooth.
    Spoon about 1 cup of batter onto waffle baker and bake for about 2 minutes or until golden brown.
    Carefully remove with a spatula to a wire rack to cool.
    Repeat with remaining ingredients.

To Assemble:

  • Break each Belgium Waffle into 4 sections.
    Layer 1 waffle section, adding a dollop of whipped cream, a few peaches and blueberries, add another waffle section, top with another dollop of whipped cream and top with a few more peaches and blueberries.
    Repeat with remaining ingredients.
    Serve immediately.
