Peach Bars

These easy Peach Bars are made with oats, brown sugar, and peach preserves for a buttery, chewy treat that’s perfect for summer desserts or anytime snacking.

Ingredients

  • 1 ½ cups all purpose flour
  • 1 ½ cups old fashioned oats or quick oats
  • ¾ cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup butter softened
  • 1 large egg
  • 18 ounces peach preserves

Instructions

  • Preheat oven to 375°.
  • In a large bowl, stir together flour, oats, brown sugar, cinnamon, baking powder, and kosher salt.
  • Mix in softened butter and egg until well combined and crumbly. The mixture should hold together when pressed.
  • Reserve about 1 1/2 cups of the mixture for topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
  • Evenly spread peach preserves over the crust layer.
  • Sprinkle the reserved oat mixture over the top and gently press it down.
  • Bake for 30–35 minutes, until the top is golden brown and the edges are set.
  • Cool completely before slicing into bars for clean cuts, or serve warm with vanilla ice cream.

Notes

  • Substitute preserves: Apricot or raspberry work just as well
  • Add crunch: A handful of chopped nuts in the topping adds texture
  • Make it ahead: These bars store well for a few days—perfect for prepping in advance. Cover with plastic wrap and store at room temperature.
