Peach Bars
These easy Peach Bars are made with oats, brown sugar, and peach preserves for a buttery, chewy treat that’s perfect for summer desserts or anytime snacking.

- 1 ½ cups all purpose flour
- 1 ½ cups old fashioned oats or quick oats
- ¾ cup brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- ½ cup butter softened
- 1 large egg
- 18 ounces peach preserves
Preheat oven to 375°.
In a large bowl, stir together flour, oats, brown sugar, cinnamon, baking powder, and kosher salt.
Mix in softened butter and egg until well combined and crumbly. The mixture should hold together when pressed.
Reserve about 1 1/2 cups of the mixture for topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
Evenly spread peach preserves over the crust layer.
Sprinkle the reserved oat mixture over the top and gently press it down.
Bake for 30–35 minutes, until the top is golden brown and the edges are set.
Cool completely before slicing into bars for clean cuts, or serve warm with vanilla ice cream.
