Meatball Poppers

Everyone will love these Meatball Poppers!  Homemade pizza dough wrapped around delicious meatballs and dipped in your favorite pizza sauce.

Ingredients

  • 1 ½ pounds ground beef 80/20
  • 1 ½ cups onion diced
  • 1 cup bell pepper diced
  • 1 tablespoon granulated garlic
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons black pepper
  • pizza dough for 3 pizzas
  • ¼ cup butter plus more to butter the pan
  • 2 garlic cloves sliced thin
  • 1 tablespoon fresh parsley chopped
  • 12 ounces pizza sauce

Instructions

  • In a large mixing bowl, combine diced onions and bell peppers with ground beef, eggs and seasonings.
  • Use a 1 1/2 tablespoon cookie scoop to make meatballs and place on a baking sheet with space in between.
  • Bake or grill meatballs at 300 ° until they reach 160° using a digital meat thermometer. Remove from grill or oven and cool slightly.
  • Divide pizza dough in half, then each half into quarters and each quarter into 4 pieces to make 32 pieces.
  • Roll each dough piece into a ball and flatten on a floured surface.
  • Add a meatball to each dough round and pinch the edges to form a ball.
  • Place into a buttered skillet or large baking pan.
  • Bake for 375° 18-20 minutes or until golden brown.
  • Remove from oven.
  • Melt butter in a small skillet and add garlic cloves, cook over low heat 3-4 minutes. Remove from heat and add in chopped parsley.
  • Brush garlic butter over meatball poppers.
  • Serve with pizza sauce.

Notes

  • Storage: Store leftover meatball poppers in an airtight container in the refrigerator 3-4 days.
  • Reheat: Cook meatball poppers on a baking sheet in a 350° oven for 12- 15 minutes or until heated through.
