Lemon Crumb Bars

Lemon Crumb Bars are an easy to make dessert that perfectly combines tangy lemon filling with a buttery coconut crumb topping. They're delightful for everyday treats and especially ideal as an Easter dessert to brighten your holiday table.

Ingredients

  • 1 cup all purpose flour
  • 1 cup quick oats
  • ½ cup shredded coconut
  • ½ cup walnuts or pecans, chopped
  • ½ cup brown sugar
  • ½ teaspoon baking powder
  • ½ cup butter
  • 1 tablespoon lemon zest
  • ½ cup lemon juice
  • 14 ounce sweetened condensed milk

Instructions

  • Preheat oven to 350°.
  • In a bowl, mix flour, shredded coconut, oats, walnuts, brown sugar and baking powder. Mix in butter until crumbly.
  • In a separate medium bowl, add sweetened condensed milk, lemon zest and lemon juice, whisking until smooth.
  • Press half of the crumb mixture into a 9 x9 inch baking dish to form the crust.
  • Pour lemon mixture evenly over the crust.
  • Sprinkle remaining crumble mixture evenly on top.
  • Bake for 25 minutes or until golden brown and the lemon filling sets.
  • Place on a wire rack to cool completely before slicing into bars.

Notes

  • Storage: Cooled Lemon Crumb Bars can be stored in an airtight container or covered with plastic wrap at room temperature for up to 2 days. For longer storage, keep them in the refrigerator in an airtight container for up to one week.
  • Baking Tip: Line the baking pan with parchment paper for easy removal.
