- 1 cup all purpose flour
- 1 cup quick oats
- ½ cup shredded coconut
- ½ cup walnuts or pecans, chopped
- ½ cup brown sugar
- ½ teaspoon baking powder
- ½ cup butter
- 1 tablespoon lemon zest
- ½ cup lemon juice
- 14 ounce sweetened condensed milk
Preheat oven to 350°.
In a bowl, mix flour, shredded coconut, oats, walnuts, brown sugar and baking powder. Mix in butter until crumbly.
In a separate medium bowl, add sweetened condensed milk, lemon zest and lemon juice, whisking until smooth.
Press half of the crumb mixture into a 9 x9 inch baking dish to form the crust.
Pour lemon mixture evenly over the crust.
Sprinkle remaining crumble mixture evenly on top.
Bake for 25 minutes or until golden brown and the lemon filling sets.
Place on a wire rack to cool completely before slicing into bars.
