Ingredients

  • 1 pound chicken breasts boneless, skinless
  • ½ cup vegetable oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 8 baked tostadas
  • ½ cup shredded cheese I like Colby- Jack
  • 2 cups shredded lettuce
  • 1 avocado peeled and diced
  • 1 cup pico de gallo
  • 1 lime sliced

Instructions

  • Slice chicken breasts into 2 - inch strips. Mix marinade together and add chicken, stirring to coat well. Cover with plastic wrap and refrigerate for 1-2 hours.
  • Preheat grill. Add chicken to grill and discard marinade.
  • Cook 8-10 minutes, turning to cook on both sides until cooked through (165 degrees internally).
  • Remove from grill and allow to rest 3- 4 minutes.
  • Cut chicken into bite- sized pieces.
  • Sprinkle each tostada with cheese and place on a baking sheet. Place under the broiler for about a minute, just until cheese is melted.
  • Top with chicken, lettuce, pico de gallo, and avocado and a squeeze of lime.
  • Serve immediately.
