- 4 slices Texas toast or any sandwich bread
- 2 tablespoons butter softened
- 1 tablespon yellow mustard
- 1 tablespoon bacon grease or oil
- 4 slices Petit Jean Bologna
- 2 slices American cheese
- 2 slices Swiss Cheese
- 2 slices Provolone Cheese
Spread softened butter on one side of each slice of Texas toast.
Spread yellow mustard on the inside of one slice of bread for tangy flavor.
Heat a skillet or griddle over medium heat and lightly coat with bacon grease or oil. Add slices of Petit Jean bologna. Make about 3 small slits around the edge of each slice for the bologna to cook evenly. Cook until browned, flip and brown on the other side until desired doneness.
Place American cheese and Swiss cheese on the mustard side of the bread and place onto a pan or griddle - butter side down.
Add fried bologna, then top with slice of provolone cheese. Place the second slice of bread on top, buttered side out.
Cook over medium-low heat until the bread is golden and the cheese is melted, flipping once, cooking until golden brown.
Slice and enjoy while hot or at room temperature with a dill pickle or cucumber onion salad.
