Fried Bologna Grilled Cheese

Ingredients

  • 4 slices Texas toast or any sandwich bread
  • 2 tablespoons butter softened
  • 1 tablespon yellow mustard
  • 1 tablespoon bacon grease or oil
  • 4 slices Petit Jean Bologna
  • 2 slices American cheese
  • 2 slices Swiss Cheese
  • 2 slices Provolone Cheese

Instructions

  • Spread softened butter on one side of each slice of Texas toast.
  • Spread yellow mustard on the inside of one slice of bread for tangy flavor.
  • Heat a skillet or griddle over medium heat and lightly coat with bacon grease or oil. Add slices of Petit Jean bologna. Make about 3 small slits around the edge of each slice for the bologna to cook evenly. Cook until browned, flip and brown on the other side until desired doneness.
  • Place American cheese and Swiss cheese on the mustard side of the bread and place onto a pan or griddle - butter side down.
  • Add fried bologna, then top with slice of provolone cheese. Place the second slice of bread on top, buttered side out.
  • Cook over medium-low heat until the bread is golden and the cheese is melted, flipping once, cooking until golden brown.
  • Slice and enjoy while hot or at room temperature with a dill pickle or cucumber onion salad.
