- ½ cup butter softened
- ½ cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 1 ¾ cups old fashioned oats
- 1 ½ cups chocolate chips
- 1 cup Rice Krispies
- ½ cup sweetened flake coconut
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
Preheat oven to 325°.
In a large mixing bowl combine butter, oil, sugar and eggs with a wooden spoon.
Mix in brown sugar and vanilla.
Add flour, oats, chocolate chips, Rice Krispies, coconut, baking powder, baking soda, baking soda and salt.
Mix until well combined.
Use a medium size cookie scoop to form cookie dough balls and place about 2 inches apart on lined baking sheets.
Bake for 15 minutes or until light brown around the edges.
Remove to a wire rack to cool.
Store in an airtight container up to 5 days.
