Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks to brown on all sides.
Add diced onion and seasonings to the browned ground beef, stirring to mix well. Continue to cook, stirring often. If your ground beef is super lean, add 1 tablespoon of olive oil if needed.
Continue to cook until onions are softened, about 6 – 8 minutes.
Remove from heat and stir in chipotle sauce and shredded cheese.
Spoon ground beef filling into tortillas and roll up, placing seam side down onto a baking sheet or cutting board.
Heat lard or vegetable oil in a cast iron skillet or dutch oven to 375° using a deep fry thermometer.
Fry taquitos a few at a time, seam side down first.
Turn after a few minutes to brown all sides.
Remove to a paper towel lined wire rack in a sheet pan.
Serve immediately with your favorite toppings.
