Chipotle Ground Beef Taquitos

Ingredients

  • 1 pound ground beef
  • 1 onion medium, diced
  • 2 tablespoons granulated garlic
  • 2 teaspoons ground cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 1 can chipotle sauce 7.7 ounce
  • 8 ounces cheddar cheese shredded
  • 15 flour tortillas small, fajita size
  • 3 cups lard or vegetable oil for frying

Instructions

  • Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks to brown on all sides.
  • Add diced onion and seasonings to the browned ground beef, stirring to mix well. Continue to cook, stirring often. If your ground beef is super lean, add 1 tablespoon of olive oil if needed.
  • Continue to cook until onions are softened, about 6 – 8 minutes.
  • Remove from heat and stir in chipotle sauce and shredded cheese.
  • Spoon ground beef filling into tortillas and roll up, placing seam side down onto a baking sheet or cutting board.
  • Heat lard or vegetable oil in a cast iron skillet or dutch oven to 375° using a deep fry thermometer.
  • Fry taquitos a few at a time, seam side down first.
  • Turn after a few minutes to brown all sides.
  • Remove to a paper towel lined wire rack in a sheet pan.
  • Serve immediately with your favorite toppings.
