Chicken Tater Tot Casserole

Chicken Tater Tot Casserole is a hearty recipe filled with cheesy chicken, bacon and ranch and vegetables topped with crispy tater tots. Think of it as chicken pot pie topped with crispy tater tots!

Ingredients

  • 1 pound chicken cooked and chopped into bite-size pieces
  • 6 slices bacon cooked and crumbled
  • 4 ounces cream cheese softened
  • 8 ounces sour cream
  • 2 teaspoons Better than Boullion chicken
  • 1 ½ tablespoons Ranch Seasoning Mix
  • 1 tablespoon granulated garlic
  • 1 teaspoon black pepper
  • 10 ounces frozen mixed vegetables
  • 2 cups cheddar cheese shredded
  • 28 ounces frozen tater tots
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley chopped

Instructions

  • Preheat oven to 375°.
  • Chop chicken into bite-size pieces and set aside.
  • Crumble cooked bacon and set aside.
  • Add cream cheese, chicken boullion, garlic, salt and pepper to a large bowl. Beat with an electric mixer until smooth.
  • Add chicken and frozen mixed vegetables, folding into the cream cheese mixture.
  • Pour into a casserole dish or baking dish and spread evenly.
  • Top with shredded cheese and bacon.
  • Add tater tots in a single layer. Spray or brush with olive oil.
  • Bake for 45 minutes or until filling is hot and tater tots are golden brown.
  • Remove from oven and garnish with parsley if desired.

Notes

  • Storage: Store leftover casserole in an airtight container in the refrigerator 3- 4 days.
  • Reheat: Place tater tot casserole into a covered skillet and cook over medium heat, gently breaking it up to heat through evenly. Heat in a 350° oven, covered with aluminum foil for 15- 20 minutes or until heated through.
