Chicken Burrito Casserole

Ingredients

  • 2 cups cooked chicken thighs chopped or shredded
  • 2 cups sharp cheddar cheese shredded - divided use
  • 2 cups monterey jack cheese shredded - divided use
  • 1 can refrigerated crescent dough
  • 4 ounces cream cheese softened
  • ½ cup sour cream plus more for serving
  • 7 ounces green chiles
  • 2 tablespoons taco seasoning
  • 16 ounces refried beans
  • 2 cups Nacho Cheese Doritos crushed
  • 2 tablespoons fresh cilantro chopped for garnish
  • sliced olives optional for garnish
  • salsa for garnish

Instructions

  • Preheat oven to 400°.
  • In a mixing bowl, combine cream cheese, sour cream, green chiles, and taco seasoning. Fold in the diced chicken until well coated.
  • In a 9×13 casserole dish, press the crescent dough into an even layer, pressing the seams together.
  • Spread refried beans over the dough, followed by half of the shredded cheeses.
  • Spoon the chicken mixture evenly over the cheese layer.
  • Sprinkle the remaining shredded cheese over the top.
  • Crush the Doritos and spread them over the casserole.
  • Bake for 30 minutes or until golden and bubbly.
  • Serve with fresh cilantro, salsa, sour cream and black olives.

Notes

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: To reheat, cover a baking dish with foil and bake at 350°F for 15-20 minutes until heated through.
  • Variations: If you don’t have refrigerated crescent dough, substitute flour tortillas in a single layer or pizza dough.
