- ½ cup apple cider vinegar
- ¼ cup olive oil extra virgin
- ¼ cup brown sugar
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- 2 cloves garlic minced
- 2 15 ounce canned black eyed peas rinsed and drained
- 1 cup bell peppers diced
- ½ cup red onion diced
- ½ cup fresh cilantro chopped
Make the Dressing: Add vinegar, olive oil, brown sugar, salt, pepper, cumin, paprika and minced garlic to a bowl. Whisk to combine.
Rinse and drain black eyed peas.
Place black eyed peas, diced vegetables and dressing in a bowl. Stir until well combined.
Stir in cilantro.
Serve immediately or cover and refrigerate until ready to serve.
- Bacon: I picked up cans of black peas with bacon added. You can add a few slices of cooked and crumbled bacon for added flavor.
- More Vegetables: Add any fresh vegetables that you have on hand. Diced tomatoes, cucumbers or celery are great options.
- Storage: Store black eyed pea salad in an airtight container in the refrigerator 6-7 days.
