This White Cheese Dip is melty, creamy, just the right amount of spicy, and it tastes even better than what you get at a Mexican restaurant. You won’t believe how easy it is to make at home!

When my aunt and uncle are in town, we alway head to our favorite Mexican restaurant and we love their white queso dip. I had to try to recreate it at home and it was a big hit!

Ingredients You’ll Need for White Cheese Dip
- onion
- jalapeño
- garlic
- butter
- evaporated milk or use heavy cream and whole milk
- white American cheese or white Velveeta (find white american cheese at the deli counter in the grocery store)
- RoTel tomatoes with green chiles
- kosher salt
- diced tomatoes – optional
- fresh cilantro – for garnish
- tortilla chips – for serving
How to Make White Cheese Dip
- Sauté: Dice the onion and jalapeño, then mince the garlic. Melt butter in a saucepan over medium heat and sauté the onion, jalapeño, and garlic until softened and fragrant.
- Add the liquid : Pour in evaporated milk and bring just to a simmer.
- Melt the cheese: Add the white American cheese (or white Velveeta), cut into cubes. Stir often until the cheese is completely melted and smooth.
- Stir in RoTel & season: Mix in the RoTel tomatoes with green chiles and kosher salt. Stir until fully combined and heated through.
Serve it hot: Pour the dip into a serving dish or small slow cooker to keep warm. Garnish with diced tomatoes and chopped cilantro.
Serve with tortilla chips.
