  • Russet potatoes or Yukon gold, baby potatoes work well too.
  • Red onion – Use yellow onion if that is what you have.
  • Bell peppers – Green bell peppers or red bell peppers
  • Garlic – use garlic powder if you don’t have fresh.
  • Olive oil
  • Smoked paprika
  • Dried thyme – use fresh herbs if you have them on hand.
  • Salt and pepper

How to Make Sausage Potato Skillet

  1. Prep the Ingredients – Peel and cut the potatoes into bite-sized pieces. Rinse the potatoes, drain well and dry with paper towels. Slice the smoked sausage into rounds, and chop the red onion, bell peppers into chunks about the size of the potatoes, and mince the garlic.

  1. Cook the Potatoes – Heat olive oil in a large cast-iron skillet over medium-high heat. Add the potatoes and cook until they crisp up, stirring occasionally. Remove to a bowl.
  2. Brown the Sausage – In the same skillet, add the smoked sausage and cook until browned. Remove to the bowl with the potatoes.

  1. Sauté the Vegetables – Add the red onion and bell peppers to the skillet and cook for about 3 minutes. Stir in the minced garlic and continue cooking until vegetables are softened.
  2. Combine Everything – Return the potatoes and smoked sausage to the skillet. Add the smoked paprika, dried thyme, salt, and pepper. Mix well and cook for an additional 5 minutes the mixture is hot and flavors come together.
