I found this recipe in an old cookbook and adapted it slightly. It was originally on the Eagle Brand sweetened condensed milk can back in 1947!

Ingredients Needed for Lemon Crumb Bars

  • All-purpose flour
  • Shredded coconut
  • Quick Oats
  • Walnuts or pecans – chopped
  • Brown Sugar
  • Baking powder
  • Butter – salted or unsalted butter works.
  • Fresh lemon juice – bottled lemon juice works too or use lime juice if that’s what you have.
  • Lemon zest
  • Sweetened condensed milk

Step-by-Step Instructions for Lemon Crumb Bars Recipe

  1. In a bowl, mix flour, shredded coconut, oats, walnuts, brown sugar and baking powder. Mix in butter until crumbly.
  2. In a separate medium bowl, add sweetened condensed milk, lemon zest and lemon juice, whisking until smooth.

  1. Press half of the crumb mixture into a 9 x 9 inch baking dish to form the crust.
  2. Pour lemon mixture evenly over the crust.
  3. Sprinkle remaining crumble mixture evenly on top.
  4. Bake for 25 minutes or until golden brown and the lemon filling sets.
  5. Place on a wire rack to cool completely before slicing into bars.

  • Storage: Cooled Lemon Crumb Bars can be stored in an airtight container or covered with plastic wrap at room temperature for up to 2 days. For longer storage, keep them in the refrigerator in an airtight container for up to one week.
