Ingredients for Chicken Burrito Bake
- Cooked and shredded chicken– We are using grilled chicken thighs – a rotisserie chicken is also a great option.
- Refrigerated crescent dough
- Refried beans – substitute rinsed and drained black beans if you don’t have refried beans.
- Cheddar cheese
- Monterey Jack cheese or Pepper Jack Cheese
- Cream cheese – low fat cream cheese works just fine in this casserole.
- Sour cream – use Greek yogurt if that is what you have.
- Green Chiles – we are using mild, use hot green chiles or jalapenos if preferred.
- Taco Seasoning – homemade or your favorite package.
- Nacho Cheese Doritos – Optional but it adds a nice crunch to the casserole. Crushed tortilla chips would also be great.
- Cilantro – optional for garnish.
- Salsa, sour cream and black olives for serving
Instructions for Chicken Burrito Casserole
- Chop or shred the cooked chicken and shred both cheeses.
- In a mixing bowl, combine cream cheese, sour cream, green chiles, and taco seasoning. Fold in the diced chicken until well coated.
- In a 9×13 casserole dish, press the crescent dough into an even layer, pressing the seams together.
- Spread refried beans over the dough, followed by half of the shredded cheeses.
- Spoon the chicken mixture evenly over the cheese layer.
- Sprinkle the remaining shredded cheese over the top.
- Crush the Doritos and spread them over the casserole.
- Bake for 30 minutes or until golden and bubbly.
- Serve with fresh cilantro, salsa, sour cream and black olives.

- 2 cups monterey jack cheese shredded – divided use
- 1 can refrigerated crescent dough
- 4 ounces cream cheese softened
- ½ cup sour cream plus more for serving
- 7 ounces green chiles
- 2 tablespoons taco seasoning
- 16 ounces refried beans
- 2 cups Nacho Cheese Doritos crushed
- 2 tablespoons fresh cilantro chopped for garnish

Instructions
- Preheat oven to 400°.
- In a mixing bowl, combine cream cheese, sour cream, green chiles, and taco seasoning. Fold in the diced chicken until well coated.
