I love easy desserts and it seriously doesn’t get any easier than this blackberry cobbler. It makes a skillet size portion which is great for a weeknight dessert or small gathering.

Wild blackberries are plentiful in Oklahoma and I try to get out and pick as many as I can while they are ripe. I freeze them to enjoy all year long and make no bake blackberry cheesecake or an easy blackberry crisp when the craving strikes.
How to Make Skillet Blackberry Cobbler:
- Spray a 10 inch skillet or pie plate with non stick cooking spray.
- Mix flour, sugar and baking powder together in a bowl.
- Add milk, melted butter and vanilla and whisk together.
- Pour into skillet.
- Top with blackberries.
- Mix cinnamon and sugar together and sprinkle over blackberries.
- Bake about 20- 25 minutes or until blackberries are bubbly and cobbler is set up.
- Remove from oven and cool about 10 minutes before serving.
- Can be served warm or at room temperature with sweetened whipped cream or vanilla ice cream.
Store leftover cobbler in refrigerator wrapped in plastic wrap up to 2 days. Bring to room temperature before serving.
Recipe Variations:
Double the recipe and bake in a 9 x 13 baking dish for 50 minutes to one hour.
How to Make Sweetened Whipped Cream:
Beat 1 cup of heavy whipping cream with an electric mixer at high speed until thickened. Add in 1/3 cup powdered sugar and beat until stiff peaks form. Keep refrigerated until ready to serve.

Ingredients
- ½ cup all purpose flour
- ½ cup sugar
- ½ teaspoon baking powder
- 6 tablespoons milk
- ¼ cup melted butter
- 1 teaspoon vanilla
- 2 cups blackberries
for topping:
- 2 tablespoons sugar
- ½ teaspoon ground cinnamon
- sweetened whipped cream or vanilla ice cream for serving.
Instructions
- Preheat oven to 350°.
- Spray a 10 inch skillet or pie plate with non stick cooking spray.
- In a bowl, whisk together flour, sugar and baking powder.
- Add milk, melted butter and vanilla and combine until smooth.
- Pour into prepared skillet and top with blackberries.
- In a small bowl mix 2 tablespoons of sugar and cinnamon together.
- Sprinkle over blackberries.
- Bake cobbler for 20 - 25 minutes or until blackberries are bubbly and cobbler is set.
- Remove from oven and cool slightly before serving with whipped cream or vanilla ice cream.
