Grinch Cookies
Grinch Cookies are a fun and yummy cookie for Christmas cookie trays and holiday parties. Pistachio pudding cookies with red heart candies are sure to be a favorite.

Ingredients for Grinch Cookies
- Butter – salted butter or unsalted, slightly softened
- Powdered Sugar
- Large Eggs
- Vanilla Extract
- Almond Extract
- All Purpose Flour
- Pistachio Instant Pudding Mix
- Baking Powder
- Kosher Salt
- Green Gel Food Coloring
- Heart Shaped Candies
Step By Step Directions for Grinch Cookies
- Add butter to a large mixing bowl and beat at medium speed with an electric mixer until creamy, about 2 minutes.
- Add powdered sugar and mix at medium speed until well combined.
- Next, add eggs, vanilla extract and almond extract and mix well.
- Add flour, pudding mix, baking powder and salt.
- Mix at low speed until incorporated, raise to medium-high speed until well combined.
- Add 3-4 drops of food coloring and mix until dough is solid green and no streaks remain.
- Using a small cookie scoop, shape the cookie dough into 1-inch balls.
- Place powdered sugar in a small bowl. Roll cookie dough in the powdered sugar.
- Line a cookie sheet with parchment paper or a silicone baking mat. Place cookie dough about 2 inches apart.
- Bake for 10-12 minutes until cookies are lightly browned on the bottoms.
- Remove from oven and press heart candies into the tops of the cookies.
- Cool on the baking sheet.
Recipe Notes and Variations
- Heart Candy Substitutes: Use Red m&m candies if you don’t have heart sprinkles or pipe red icing onto the cookies in a heart shape.
- Storage: Store cookies in an airtight container up to 5 days.
- Add-ins: Add 1/2 cup chopped pecans or pistachios if desired. Chocolate chips are another easy add-in.

How much powdered sugar goes into the cookies? The recipe says “1 cup powdered sugar divided” but does not specify how much of that goes into cookies and how much is retained for rolling.
