I was provided with a sample of Highclere Castle Gin for recipe development but this is not a sponsored post. All thoughts and opinions are my own.

What is Gin?
Gin is a distilled alcoholic beverage that is made with juniper berries, herbs and botanicals. Gin is once again gaining in popularity. It is famous for the making a simple gin & tonic, bees knees and martinis. It is a great mixed with apple cider in this simple fall drink.
We also love mixing up a gin sour after a long day. It’s perfect to sip on while we are cooking dinner and these Abbey Cocktails are a favorite for a weekend brunch.
What is the Best Gin for Cocktails?
We have tried several brands of gin but Highclere Castle is the smoothest and best tasting that we have sampled. It’s the only one I would recommend drinking straight.
Highclere Castle is the famous setting for Downton Abbey and is home to the Carnarvon family. The Carnarvon’s worked in collaboration with England’s oldest gin distillery to produce an exceptionally smooth, luxury spirit that is worthy of Highclere’s history and pedigree.

Handy Tools for the Home Bar:
A Cocktail Shaker is a must have for those ice cold mixed drinks.
Cocktail Jigger is perfect for getting the perfect measurements for all of your favorite cocktails.
Microplane Twist & Zest is my favorite for juicing and making citrus garnishes for my favorite cocktails.
I just picked up this Ice Crusher – which is perfect for cocktails. Great if you don’t have an ice maker that crushes ice in your fridge.

I’m tempted to flip the ratio of gin to cider. This was a bit too sweet for me, but I loved the honey notes and the thyme garnish is such a nice touch. Every time you take a sip, you get that beautiful thyme scent!
Hi John,
Glad you enjoyed this cocktail. I am all about experimenting with the ratios and getting it just like you like it.
